Flashback: I met my husband over five years ago and as we were discussing our lives and families he mentioned his parents owned a strawberry farm. After dating a few months, he took me out to the strawberry field and had me taste all the varieties of strawberries. I was amazed. Super tasty, way better than store bought.
Fast forward to now and we have been eating fresh strawberries every summer of our marriage! My toddler even goes to the field in the mornings to "help" pick strawberries. I'm pretty sure she runs around and eats more than she puts in her bucket, as evidenced by her strawberry stained outfits.
Strawberry pie is good, but what is better? FRESH strawberry pie. Grow these berries in your backyard, pick them at a local strawberry farm, buy them from a roadside stand or visit your local farmer's market for this juicy fruit. Whatever you do, after you get them, bake this fresh strawberry pie. It is from the kitchen of my husband's grandmother, who was also a strawberry grower. It's good, trust me.

GRANDMA'S FRESH STRAWBERRY PIE
Prep time: 30 minutes
Cool time: 2 hours
Total time: 2.5 hrs
Yield: 1 pie
Ingredients
- 1 small pkg. strawberry gelatin
- 1 small pkg. vanilla pudding (cooked/not instant)
- 1 3/4 cup water
- 6 cups fresh strawberries
- 1 9-inch pie crust (baked)
- Cut strawberries into small chunks and slices (not too small)
- Combine gelatin, pudding and water
- Cook over medium heat until mixture boils and becomes translucent in color
- Take mixture off heat and allow to cool
- Layer cut strawberries in cooked pie crust, so they won't spill over the edge
- Pour gelatin mixture over berries evenly
- Cover gently with wax paper
- Refrigerate for a few hours
- Serve with whipped cream
- Enjoy!
